Featured Recipe: Black Bean Brownies

Ingredients

  • 1 can of rinsed and drained black beans
  • 3 tbsp canola oil (NOT olive oil)
  • 1 tsp vanilla
  • 2/3 cup sugar
  • 1/4 cup cocoa
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • handful of chocolate chips
  • 1/4 tsp salt
  • Garlic powder to taste (about 1/8 tsp)

Instructions

  1. Preheat oven to 350 degrees
  2. Add rinsed and drained black beans to food processor. Process until beans are a thick paste consistency.
  3. Add canola oil, vanilla, cocoa, sugar, eggs and baking powder to food processor. Process until well mixed and looks like brownie batter.
  4. Line 8×8 or 9×9 pan with parchment paper. Pour mix into lined pan.
  5. Sprinkle chocolate chips on top of brownie mixture. Cook brownies for 30 minutes at 350. Edges should be cooked and center firm.
