Featured Recipe: Pork Chops, Green Beans, and Potato Sheet Pan Dinner

Ingredients

  • 2 TB butter, softened
  • 1 TB minced fresh chives
  • ¼ tsp Garlic powder
  • Salt and pepper to taste
  • 1 lb fresh green beans
  • 1 lb fingerling potato
  • Olive Oil for vegetables
  • 1 lb boneless pork chop
  • 1 lb boneless pork chop
  • 2 TB Hoisin Sauce (found in Asian food aisle)

Instructions

  1. Preheat oven to 450 degrees. While heating, combine butter, chives, garlic powder.
  2. Trim green beans and arrange in middle section of sheet pan. Slice potatoes in half lengthwise, arrange cut side down along sides of sheet pan. Drizzle vegetables with olive oil. Season with salt and pepper.
  3. Pat pork chops dry with paper towel. Sprinkle with pepper, brush both sides with hoisin sauce, place chops on top of green beans.
  4. Cook for 15-20 minutes, or until pork chops register at 145 degrees on a meat thermometer. Remove chops from pan and place on serving dish. Top chops with 2 tsp chive butter, tent with foil to rest until vegetables are done, about 10-15 minutes more.
  5. When vegetables are tender and starting to brown, remove from oven, toss with remaining chive butter and serve with pork chops.
